DISTRIBUTION OF ANTIOXIDANTS IN BLACK FRUITS OF ARONIA

The aim of the work was to determine the distribution of antioxidants in black chokeberry fruits in comparison with Michurin’s aronia and common rowan. The content of anthocyanins was determined spectrophotometrically, carotenoids by potassium dichromate in the pulp and peel of fresh fruits, as well as during six-month storage in a household refrigerator. The content of anthocyanins in the pulp of Michurin’s aronia is 1.24 times less, and carotenoids are 3.06–3.43 times more compared to black chokeberry and common rowan. The content of the studied antioxidants in the peel of aronia fruits is statistically the same, and in the fruits of common rowan it is 106–123 times less compared to them. During storage, the content of anthocyanins by 59–62% and carotenoids by 8–10% decreases more significantly in the fruits of black chokeberry. The fruits of Michurin’s aronia are slightly inferior to black chokeberry in terms of anthocyanin content, but surpass the latter in terms of carotenoid content, are more promising for antioxidant- containing phytopreparations.
